It dates back to 1943. Foynes near Limerick had become one of the biggest civilian airports in Europe during World War ll and then an airbase for transatlantic flights that often carried political or Hollywood figures.
One evening, a flight had to turn back to Foynes mid way through its journey. The Chef, Joe Sheridan, decided to whip up something special for the delayed wearily passengers to drink. The story goes that a silence descended as everyone enjoyed his creation.
The story says that one American passenger asked if it was Brazilian coffee "No," said Joe, "that's Irish Coffee" and so it got its name. Joe’s recipe for Irish Coffee is Whiskey as smooth as the Wit of the Land, Sugar, sweet as the tongue of a Rogue, Coffee as strong as a Friendly Hand and Cream as Rich as an Irish Brogue.
'Do shláinte' means "To Your Health".
